Gideon's Avenger's triggered ability looks only at creatures an opponent controls becoming tapped. It does not care how the creature became tapped (attacking, by an ability, by you tapping it with a spell, etc.), as long as the creature was controlled by an opponent at the moment it became tapped.
If an opponent's creature is already tapped when it enters the battlefield (for example, through a card that puts it onto the battlefield tapped), Gideon's Avenger's ability does not trigger, because the creature did not "become" tapped while on the battlefield.
If control of a creature changes, only the controller at the moment it becomes tapped matters. For example, if you gain control of an opponent's creature and then it becomes tapped, Gideon's Avenger will not trigger because that creature is no longer controlled by an opponent.
Multiple creatures becoming tapped at the same time cause multiple triggers. Each creature an opponent controls that becomes tapped generates a separate trigger, and you put one +1/+1 counter on Gideon's Avenger for each trigger when they resolve.
